Our Last Recipe featured in a "Month Full of Recipes" is Quesadilla Cups!

Here's a fun little recipe--not to mention an easy recipe to end our Month Full of Recipe Series.

Here's what you will need:
Small muffin tin, bag of tortillas, small size the 6 or 8 inch in diameter, Pam, pepper jack bar cheese
*Keep in mind that 1 tortilla will make 4 quesadilla cups.

-Spay both sides of the tortillas with Pam or Olive oil, cut them into fourths by using a pizza cutter or knife.

-Put them in the {greased} muffing tins --like above

-Cut pepper jack cheese and put into the "cups"--pictured above.

Bake in a 375 F degree oven for about 10 minutes. Let them set for about 3 minutes before eating. Eat just like this or add some salsa to liven things up a bit.

Chicken and Dressing {Featured in a Month Full of Recipes}

I'm from the South, so this is southern dressing, not stuffing.

*For the cornbread I just just follow the directions on the back of the cornmeal package with one exception. I pour some oil in an iron skillet and put in the oven and let it get hot--really hot. Then I pour the batter in the skillet and cook for the allotted amount of time that the package says.

*I boil my chicken on top of the stove, so that I can make my own stock. I put my chicken in a pot cover it with water--maybe about 3 inches above the chicken--cook until done.

*Chop one onion and cook in stock (in a different pan) until the onions are translucent.

*Break cornbread apart and pour 1/2 of your stock on top of your cornbread, stir together.

*Add onions, and one can of cream of celery soup. Stir together, add salt and pepper to taste.

**Let it sit for a few minutes, you are letting the bread soak up the stock.

*Add more stock, stir and let sit

*Add more stock if needed--you should be able to see puddles of stock through out your mixture. This will keep your dressing from drying out.

*Add butter on top to help brown it...like in the picture above.

*Cook in oven at 350 degrees for at least 30 minutes or longer, just until brown around the edges.

*Enjoy

**You can also substitute turkey for the chicken or not put any meat in it at all---either way it's very tasty!

Apple Dumplings---Made with Mountain Dew {Featured in "A Month Full of Recipes"}

I never get a picture of these when they come right out of the oven, because they get devoured!

Ingredients:*2 whole Granny Smith Apples
*2 cans (8 Oz. Cans) Crescent Rolls
*2 sticks Butter
*1-1/2 cup Sugar
*1 teaspoon Vanilla
*Cinnamon--as much as you like
*1 can (12 Oz.) Mountain Dew Soda--I know what you are thinking---but seriously, just try the Mountain Dew in this recipe!

Directions:
*Peel and core apples. Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan.

*Melt butter, then add sugar and stir just a little (one or two whirls--you want it grainy, not mixed well at all!).

*Add vanilla, stir, and pour entire mixture over apples. Pour Mountain Dew around the edges of the pan (do not pour over the apples, you want the butter and sugar mixture to 'cling' to the apples)

*Sprinkle with cinnamon and bake at 350 degrees for 40 to 45 minutes.

If you try it, let me know how you like it.

Recipe #15 Brown Sugar Bacon Wrapped Smokies in the Crockpot

Today in A Month Full of Recipes, we are crocking up some Brown Sugar Bacon Wrapped Smokies. I know this is bad, but the bacon grease and brown sugar give this an incredible taste!

Ingredients:Two packs of bacon
Two packs of smokies
Bag of brown sugar--you can use less if you want

Directions:::Take the pack of bacon cut it in 3 strips.
::Wrap a strip of bacon around each smoky and stick a toothpick in it.
::Once you have all your smokies wrapped, dump in the whole bag of brown sugar.
::Put the crock pot on high. Make sure you stir about every 30 minutes to get all the smokies covered in the brown sugar and to make sure they cook evenly. In about 45 minutes, the juices of the smokies and bacon will start to make it easier to stir. Let cook for about 3-4 hours

Let me know what you think.
