It's Frozen Food Month | Enter ALDI's Sweepstakes - 10 Winners!

It's Frozen Food Month and ALDI is celebrating in a big way! Go ahead and "LIKE" the ALDI Facebook page so that you will be ready for when the sweepstakes starts!

Starting at NOON (CST) on 3/10/15, Aldi will be giving away 10 Gift Certificates to help you fill your freezer! Once the giveaway goes live, all you have to do is leave a comment (on their Facebook Page) with your favorite frozen food from ALDI. This promotion is running for only 24 hours and will end at NOON on 3/11/15.

Here are some of my favorite 'Frozen Foods" from ALDI.
Lobster!
Did you know that you can buy Lobster at ALDI, honestly, I didn't either until this past weekend!

I love trying new easy meals, especially ones that are already put together like this Shepherd's Pie.

Shredded hash browns are something that I like to buy at ALDI. I have a recipe called Cracked Potatoes that calls for hash browns and I can purchase these for a fraction of the cost at most grocery stores! 

You will want this recipe, and you can find all the ingredients at ALDI.


Cracked Potatoes Recipe:
Ingredients:
::32 oz bag of {THAWED} shredded hash browns (my ALDI only had the 30 ounce bags--but we didn't miss the two ounces!)

::32 oz sour cream

::2 packs of Ranch powdered dip mix

::6 oz. of 'real' bacon bits...not the crunchy!

::2 cups of cheddar cheese

Directions:
::Mix sour cream, Ranch dip, bacon bits and cheese all together--mix it good now!

::Stir in hash browns; make sure everything is mixed together really good.

::Spray 13x9 pan with cooking spray

::Place ingredients in the pan, cover with foil and bake at 350 degrees for 45 minutes. Uncover and cook for an additional 20 minutes or just until the top starts to brown.

Rock Cornish Game Hens
I have never cooked one of these; there are six of us and I have never really been sure if I needed six or if three would be enough for dinner---but with ALDI's prices and there abundant supply of Cornish Game Hens, I might just have to prepare a few of these for dinner one night this week!


Wild Salmon
I never really thought that I would like frozen Salmon, but this was surprisingly good!

ALDI has a vast assortment of frozen foods including a lot of snack foods from burritos to mini cheeseburgers, pot pies to Taquitos, Corn dogs to chicken wings! And they carry some of the best frozen garlic bread ever (Or at least I think so!).

These frozen snacks are great to heat up for birthday parties, get-togethers, or a game night. Invite a few friends over, play games, watch movies and eat!


Beef Burgers
These are great for grilling! I know many people are still trying to get thawed out from last week's snowstorms; so a welcomed break is in the forecast and we are actually seeing much warmer temperatures this week---perfect time to fire up the grill! However, we have been know to grill while it is snowing outside! 

Frozen Vegetables
You name them, ALDI has them from peas to Brussels sprouts, corn on the cob to sweet potato fries, veggie stir fry and more!



My all time favorite frozen food that I buy from ALDI is there frozen chicken breasts! I love these for so many reasons--yes, a great prices, but I make so many recipes using chicken, and you just cannot go wrong with these chicken breast!

One recipe that I love to make is Sour Cream Enchiladas. Every time I make them, my family raves about how good they are as they clean the pans! Here is the recipe:


I forgot to get a picture of these before everyone started eating---thus the crumbs in the plate!

Sour Cream Enchiladas
Ingredients:

1 16 oz container sour cream
1 can of green chiles
1-2 cups chicken stock (I always use mine from where I cooked the chicken)
1 1/2 cups of shredded chicken (or more!)
1 tsp garlic powder
Salt/Pepper, to taste
8 to 10 flour tortillas
1-2 cups shredded cheese


Directions:

1. In large skillet, whisk sour cream, green chiles and 1 cup of chicken stock. Add more chicken stock until it comes to the consistency you want for your sauce. Add garlic powder, salt and pepper to taste.

2. Before adding the cooked and shredded chicken, save 1 cup of the sour cream sauce.

3. Stir chicken into the sauce and let simmer about 10 minutes, allow flavors to come together.

4. Spoon into tortillas. Roll and place, seam side down, into a 9×13 baking dish.

5. Spread the sour cream sauce, that you removed, over the tortillas.

6. Sprinkle cheese over the top and bake about 15-20 minutes at 350 degrees F.

Serve these with corn or a salad.
