Whew! We are done! My children helped out a lot today! I could not have done it without them!

Here is what we ended up with:
Bacon, Cheese & Egg Biscuit Cups
Banana Bread x3
Brown Bag Burritos ---32 of them! 8 of them did not make it to the freezer!
Southwest Roll-ups ---15
Marinated Chicken tenders --- marinated one bag in Italian Dressing, marinated a second bag in chicken broth, brown sugar, and cinnamon---pull out of freezer and cook in crock pot

4 Roast---rubbed Lipton Onion soup mix onto these and then stuck all four in the freezer.

Baked a lot of chicken---used some for dinner tonight, used some for the recipes listed here and will freeze the rest for later use.

Sour Cream Chicken Enchiladas---had this for dinner tonight and oh my goodness, it was delicious! It is the two, uncovered dishes in the picture above.
Baked Ziti ---3 loaves
Hamburger Steaks --just pat out like normal, season with your choice of seasonings, freeze like in the picture below, after they freeze individually, place in a large zip lock bag.
Brown Sugar and Oat Muffins Recipe
1 cup old-fashioned oats
1 cup whole-wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup packed brown sugar
3/4 cup milk
1/4 vegetable oil 1 teaspoon vanilla extract
**In a small bowl, combine the oats, flour, baking powder and salt. In another small bowl, beat the eggs, brown sugar, milk, oil and vanilla. Stir into the dry ingredients just until moistened.
*Fill greased or paper-lined muffin cups tow-thirds full. Bake at 400 degrees for 15 to 17 minutes or until a toothpick comes out clean. Cool for 5 minutes and then enjoy!

These muffins are so good---I made a triple batch, some were eaten, and the rest were put in the freezer.

After my kiddos went to bed (at 8:00) I boiled black beans and great northern beans and cooled some chicken breasts that I had put in the crock pot this afternoon. Still working on the ground beef...I'll have to try your Enchiladas...sounds wonderfully delicious!

ReplyDeleteThat's a lot of food to make. Next month I will try so hard to join in. I own my own small business and the hours get so long, it would be wonderful to be able to pop a good meal in the oven.. I love all your wonderful information that you share..
