Baking Day - Part 6 - Pumpkin Cream Cheese Squares

These are so good!

This recipe is in two parts--

PRE-HEAT YOUR OVEN TO 375 degrees!
Spay your pan--see pan size a little later.

Filling:
1/2 package of softened cream cheese
1/4 cup sugar
1 egg
* Whisk this together in a med. size bowl then set aside.

Batter:
1 cup solid-packed pumpkin
1 cup sugar
1 egg
1/3 cup veg. oil
*whisk together and then add
1 cup all-purpose flour
1/2 tsp. soda
1/2 tsp. salt,
1/4 ground nutmeg
1/4 ginger
1 tsp. cinnamon
1 tsp. baking powder

After mixing together place in a 10x13 (it will come out thin) OR 8x8 it will turn out thick.
Now the one I just made I doubled the recipe and placed it in a 10x13...so nice and fluffy!

Drizzle the filling over the top

Keep Drizzling

Take a butter knife and cut through both mixtures several times.

Keep cutting

Ready to go in the oven for 30 minutes
* I cooked this for 40 minutes ONLY because I double the recipe

I would have only put a few chocolate chips on there BUT....

My children talked me into a few more :)
Notice that I only put chocolate chips on half of the bars...I do not like chocolate chips on mine so there you have it 1/2 and 1/2
ENJOY!!!!!
