Apple-Pear Crisp --- Weight Watcher's Friendly!


Ingredients:
1 spray(s) cooking spray
1 pound(s) apple(s), Granny Smith, cored, cut into 1-inch-thick slices
1 pound(s) pear(s), Bosc and/or Bartlett, cored, cut into 1-inch-thick slices
2 tsp fresh lemon juice
4 Tbsp dark brown sugar, unpacked

Topping:
1 large egg
6 Tbsp dark brown sugar, unpacked
1/4 tsp table salt
1 tsp ground cinnamon
1 cup rolled oats
6 Tbsp light butter, melted

Instructions:
Preheat oven to 375ºF. Coat a 9- X 9-inch glass baking dish with cooking spray.

Place apple and pear slices in a medium bowl. Toss with lemon juice and sugar; set aside.

To make topping, in another medium bowl, beat egg. Add sugar, salt and cinnamon; mix to combine. Add oats; mix well.

Spoon fruit into prepared baking dish and evenly sprinkle oat mixture on top; drizzle with melted butter. Bake until fruit starts to bubble and topping starts to brown, about 45 to 50 minutes. Allow crisp to cool for a minimum of 2 hours.* Cut into 9 pieces and serve. Yields 1 piece per serving.

**Peeling the fruit is optional.

**Add 1/2 teaspoon of ground nutmeg and 1/4 teaspoon of ground ginger for a more robust spice flavor.

Weight Watcher's Monday~Motivation and Fiber!


Since my last Weight Watchers post, I have survived three of our children having birthdays --(actually survived the brownies!); and not to mention vacation with just my husband.

While on vacation, we did not track, we ate out and somehow I managed to lose 1.8 pounds at this last weigh in!

The weight loss was just what I needed to get my mind back on track, trying to stay focused on the "Big Picture."

At the meeting we talked about how we all need more fiber--it helps up to feel more full among other things!

So we are having a lot of fiber snacks--we had our first one today. I made apple and peanut butter sandwiches. I know that everyone has had apples and peanut butter before, but I have never thought to do them this way.

It is only 3 Points Plus using a tablespoon of peanut butter between two apple slices.

Weight Watcher's Monday: I gained, and a Easy Yummy Snack


I gained .6 (1/2 pound) last week---grrr! I am actually OK with it, because the previous 2 weeks were awesome weeks.

However I do know what happened, in my case--it's a brain thing, seriously. Because I did really good the last two weeks, I thought I was okay this week and only went to the gym twice! I know weird, but that's how I am.
Strawberry Shortcake--Yes, I said Strawberry shortcake!
Ingredients:
4 Reduced fat Nilla Wafers
2 large strawberries, stems removed and halved
9 grams (1 serving) cool whip free (the ones I ate--I just used a 1/2 teaspoon) the ones in the picture above the kids made with LOTS of Coolwhip!

Divide the cool whip between the Wafers, top with strawberry

2 Points+ for 4 of them!.

Weight Watcher's Monday 7/04


By Tuesday of last week, I had already used my extra 49 points! On Wednesday I went over my points--I knew my rear end was in trouble if I didn't do more at the gym. So on Wed. I walked 3 miles on the tread mill, and walked 5 miles both Thursday and Friday, plus did the weight machines. My legs felt like mush afterwards, but thankfully it paid off. I lost 3.8 pounds this week!

Happy dance happened on the scales, I about knocked over the shlef in front on me--and scared the person beside me that was weighing in (my husband, and he does't scare easliy!). My husband said I hollered---I really only think I squealed!

With today being the 4th of July, we went to the park, played around and grilled. My husband made this (see picture below)!


Onions and potatoes (with 3 sprays of cooking spray) cooked in an iron skillet---an old favorite. Yes, I ate some--just 1/2 a cup though, 4 points--but they were really good, so I tracked them as 7 points!

Weight Watcher's Monday---Happy Dance!

Let's get right to it--I lost 3 pounds this last week!

So last week, my husband threw the scales away; he said I was addicted to them. He was so right! I just didn't realize how many times a day I weighed until the scales were gone and I went in there to weigh (multiple times!).

I think it pushed me harder to do more at the gym, since I didn't have scales here at home--I had no idea where I was at, losing or not.

After the last month of being up and down, I needed that 3 pound loss!

Weight Watcher's Monday---My Husband Threw my Scales Away!


I have been up and down on the scales for the past month; at this last weigh in I was up .2 of a pound. I guess not that bad, but I like to see that line go down and not up!

My husband has told me, for years, that I am obsessed with my scales; and has said that he is just going to throw the scales away! Okay, so maybe I am was. Through out my day I would get up in the morning, weigh, take a shower and weigh again---eat breakfast, weigh again. Workout, then weigh, use the restroom, then weigh again, etc., Needless to say I would weigh several times through out the day--Can anyone relate?

Since we have been doing WW, my husband never weighs until our weigh in at the WW meeting, he looses weight just about every week, with the exception of a couple of weeks. So I said, "OK, maybe it would push me more to go ahead and throw the scales away and just weigh one time a week at our meetings." After our weigh in, we came home and he threw the scales away.

It has been only 2 days and every time I go into the bed room I head to where the scales used to be at--not even thinking. I guess I was obsessed with them--I miss them!

On a different note, here's a recipe that I want try in the near future. Have any of you tried it?

Spinach and Artichoke Dip:
Point Plus Value: 2
Servings: 12
Preparation Time: 10 min
Cooking Time: 30 min

1/2 pound(s) spinach, baby leaves, washed and dried
1 1/2 cup(s) canned artichoke hearts, without oil, drained
1 clove(s) (medium) garlic clove(s), minced (or more to taste)
1/2 tsp crushed red pepper flakes, or to taste
1/2 tsp table salt
1/2 cup(s) grated Parmesan cheese
1/2 cup(s) reduced-fat sour cream
4 oz low fat cream cheese, at room temperature
*Preheat oven to 350ºF. Coat a 7 1/2-inch deep-dish glass or ceramic pie plate (or oval oven-proof dish) with cooking spray.

*In a food processor, combine spinach, artichokes hearts, garlic, red pepper flakes, salt, Parmesan cheese, sour cream and cream cheese; puree until smooth. Using a spatula, scrape dip into prepared dish; smooth top into an even layer. Bake until golden on top, about 20 to 30 minutes, depending on desired doneness. Serve warm. Yields about 1/4 cup serving.

Weight Watcher's Monday

I was down 1.2 pounds at my last weigh in. I have lost a total of 15 pounds. Woo-Hoo!

I do not have a recipe for you this week, but I am having a baking day tomorrow--if you want to follow along.

I have tweaked a few of the recipes by using fat free ingredients and whole wheat pasta in a few of the recipes.

Weight Watcher's Monday: I Gained, a Recipe, and Coupons!

I meant to post this last night after dinner but I fell asleep!

Yes, I gained at this last weigh in. This is the first time that I have gained, so I keep telling myself one gain in 8 weeks is not too bad, right?!? That's me giving myself a pep talk.

Even though I didn't gain much, I still don't like it! But it's my own fault, I'm dropping it and losing this week---another pep talk!

Here's what we had last night for dinner--It is only 5 Point Plus per cup
Italian Chicken
2 - chicken breast (baked)
1 - tsp. oil
1 tsp. minced garlic (use as much as you like!)
salt and pepper to taste
dash of parsley, and Oregano, add a hint of basil I used Italian seasoning this time
3 - cans of dice Italian tomatoes, stewed tomatoes work well too!
1 can of Tomato Sauce, 1 can of water
Directions:
shred baked chicken put in pan, add seasonings, and stir together,
add  tomatoes
simmer for about 10 minutes
*Serve over rice or your favorite noodles, I topped ours with a little mozzarella cheese.

We really like garlic! :)


I didn't have the other spices, so I used Italian Seasoning.

Topped it with what ever cheese you have in you refrigerator.

Weight Watcher's Monday, 4/25. I have lost my 5% and my Husband has Gone Nuts!

I am so excited! We weighed in this past Saturday, and I finally reached my 5% goal. Woohoo! Plus I also lost more than my husband this week! I never loose more than him. I tried not to act too happy about that, but darn it I was tickled!

I never talk in these meetings, but when my leader gave me my 5% star I was bubbly and talked about how much fun it has been...no one agreed. Guess I am odd, I have enjoyed it, even the week I ate fudge. I really like our meeting time and my husband and I both like our leader, Marlon.

Now to the part about my husband going nuts. If you have been following my WW post, you all know that he has lost 25 pounds. He has been getting rid of his bigger size clothing, throwing them away or giving them to Goodwill--- we both have. Well last night after church, he came in and threw his Sunday suit away. Yes, his Sunday suit! Those things are expensive and yes it has gotten too big for him, but still I was like, let's rethink this!

We both figure, get rid of the bigger clothes, so we don't have anything to go back to, makes sense--- or at least to us it does. But when he threw his suit away last night...all I could see was how much we paid for it and not how much he has lost.

Now he does have another suit (hasn't worn it in about five years) and it fits him great! I am so proud of my nutty husband!

Weight Watcher's Monday, 4/18--I was hungry all Week!

I can honestly say that the whole time that I have been going to Weight Watchers, this has been the first time that I did not want to go weigh in--only because I had been bad, I ate fudge. Not just any kind of fudge, but home made, Chimney Rock Mountain fudge. It's the second best in the world, my friend Rebekah's fudge is the best ever!!!

I think that fudge turned something on or off--I stayed hungry all week. I have not been hungry at all since we  have been on WW!

I guess you win some and you lose some.

But thankfully I was down .8, not that great, but I was down. Woo-Hoo!

Recipe for this week:
PARMESAN CHICKEN STRIPS:
1 1/2 cups seasoned crouton, crushed
1 1/2 oz. (1/3 cup) fresh Parmesan cheese, grated
1 teaspoon dried parsley
1/4 teaspoon garlic salt
2 egg whites
1 tablespoon water
1 pound boneless,skinless chicken strips
1/4 cup lite ranch dressing
*Preheat oven to 450 degrees.
*Crush croutons add the freshly grated Parmesan cheese, parsley, and garlic salt to the croutons--whisk the egg whites and water together--Dip chicken pieces into egg mixture, then into crumb mixture to coat evenly. Bake 14-16 minutes or until chicken is no longer pink in the center.
*Serve with lite ranch dressing if you want too.

Each strip is 3 points plus!

Weight Watcher's Monday ---I about Passed out!

Last week, we both thought that we had messed up pretty bad with our eating, which was all my fault. Before I cook, I normally figure the points out--don't want to go over my points. Anyways one night I made cream cheese mashed potatoes. I used lite cream cheese and skim milk. My thinking was the points can't be that bad.

After dinner my husband figured the points up and JUST the potatoes were 19 points! I about passed out when he told me that! Seriously! I got light headed and that deep, sinking feeling Set in and I literally felt like, well poop!

Needless to say I was dreading our weigh in. We weighed in this past Saturday and I was down 2.6 pounds (happy dance did take place on the scales!) and my husband was down another 3 pounds. He is at a milestone---a 25 pounds milestone!

The leader presented him with a washer (a very manly gift, ya know!) that had 25 lbs on it, if you see him out, ask him to let you see it. I am so proud of him!

One discussion that took place at our meeting was about walking the upcoming 5K, which is kind of funny, because the place that the 5K is taking place at is the same place that we walked last weekend! Neat Huh?

Recipe this week is Lemon Broccoli
We love broccoli, we usually eat it steamed. A friend of mine suggested that I try it with lemon, so when it was almost done, I squeezed the juice of one lemon on it and let it finish cooking--nothing fancy, but it was good!

Weight Watcher's Monday -- It has been a Month



Wow, time flies when you are having fun! It has been a month since my husband and I joined Weight Watchers.

My husband lost 22.8 pounds this first month and I lost 10 pounds, Woo-Hoo!

We had a simple dinner tonight, stir fry and ribs. Before joining WW, I would have never thought that I could eat ribs and be on diet, oops, I mean lifestyle change.

I trimmed the fat off, there wasn't much any ways. I broiled them in the oven and when they were almost done I put BBQ Sauce on both sides. The vegetables were zero points and the ribs were only six points each and that is being generous with the points.

Weight Watcher's Monday, 3/28


It's week 3 and my husband is down a total of 15.8 pounds and he has received his 5 pound star each week at the meetings! I am so proud of him!

I lost 1.2 pounds this week and I am down a total of 9.2 pounds.

At our last meeting one of the ladies brought in a key lime pie for every one to try. She also brought the ingredients and asked our leader to figure up the points for the pie. The pie was delicious and the points came to just 3.25 a slice.

Here's the receipe:

Key lime pie
1 box of sugar free lime JELLO , whisk together with 1/4 cup of hot water.
Whisk in 2 Yoplait 'Lite' key lime yogurts.
Whisk in 1 tub of LITE Cool Whip
Whisk all ingredients good.
Pour into a 'lite' Graham Cracker crust.

*We refrigerated ours overnight and had it for Sunday dessert after lunch.
*The points are calculated on the pie being cut into eight slices.

This recipe is inexpensive to make, and very easy!

My husband garnished ours with strawberries--which are free points!

Weight Watcher's Monday


Well we had our second weigh in and I am happy to report that we both lost some weigth for the second week in a row. My husband dropped 4.4 pound (way to go honey!), I, on the other hand, only lost .4 pounds. I keep telling myself that it's a loss, right?

I know exactly why I didn't lose more than that and it because I bought several packages of Pepperidge Farm cinnamon swirl bread---it was yummy and my rear end loved it, I am certain that is where it ended up!

Our leader recommended that if we 'needed' a crunchy and salty snack to try kale chips! We asked him, where to buy them and he said you make them. So we tried it!

Here's how to make them:
We bought our kale from Whole foods for $1.99 a bunch.
*Wash each piece and pat dry with a paper towel.
*Spray a cookie sheet with olive oil
*lay the kale in a single layer--they are big leaves
*Spray the leave and bake in a 350 degree oven, watch them or they will burn.
----I check on them after about 8 minutes--they will shrivel up some and be crispy when done.
*Sprinkle with salt.
*Break into bite size pieces

My husband liked them, the kids and I did not. I thought they tasted bitter. I felt like a cow grazing in the pasture, lol!

Weight Watcher's Monday


Well my husband and I joined Weight Watchers a little over a week ago. So I thought I would share with you each Monday my results and a new healthy recipe that we have tried...and loved!

The first day we joined I had no problems getting all my points in---I actually went into my extra points for that week, eek! Thankfully the rest of the week went much better.

At our first weigh in, my husband lost 8.8 pounds and I lost 7.6 pounds--I was ecstatic!

Here's the new recipe that we tried tonight.

Dijon-Roasted New Potatoes

sprays of cooking spray
2 Tbsp Dijon Mustard
1 tps Olive oil
3/4 tsp paprika
1/2 tsp table salt
1/4 dried thyme
1/4 tsp black pepper
1 1/2 pounds uncooked new potatoes, red or white, quartered

*Preheat oven to 425 degrees. Coat 9x13 inch baking dish with cooking spray.

* In a large bowl, whisk together mustard, oil, paprika, salt, thyme and pepper, add potatoes and stir to coat.

*Transfer potatoes to prepared baking dish and roast for 15 minutes, stir and raost for about 15 to 20 more minutes until done.

**This will yield about 1 1/4 cups per serving (which is 4 servings)
**each serving is 4 points, according to Weight Watchers.

My husband made a layered fruit salad with green grapes, cantalope, oranges, and kiwi---which was ZERO POINTS!!
