Spicy Beef & Broccoli Stir-Fry {Featured in A Month Full of Recipes!}



We love stirfry in our home---okay, truthfully, there's not much that we don't like in our home!
 
This recipe is so simple, especially if you buy your meat already cut up--if not, cutting your own meat into strips is the most time consuming thing in this recipe!
 
Ingredients:
1/4 cup light soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided (I always end up using a lot more than this!)

1 boneless beef top sirloin steak (1 1/4 pounds), trimmed

3 cups broccoli flowerets

1 medium red bell pepper

1 medium onion --- I think the more the merrier on the onion :)

2 garlic cloves, chopped up (I sometimes use minced garlic from a jar...it saves time)

1/4 teaspoon red pepper flakes
1/2 cup beef broth
 
Directions:

-In medium bowl, whisk together soy sauce, cornstarch, and 1 tablespoon of the oil.

-Cut steak into strips

-Add beef to soy sauce mixture; toss to coat all the meat. Cover and refrigerate for about 15 or 20 minutes to marinate.

-Cut broccoli into flowerets and onion into thin wedges --Cut bell pepper into thin strips....set all veggies aside.

- Heat oil in a wok or skillet over medium - high heat until hot. add the beef, garlic, and red pepper flakes to skillet / wok.

-Use a wooden spoon to stir fry 3 to 4 minutes until the outside of the meat is no longer pink (do not overcook).

Remove from skillet, keep warm,

-Heat the rest of the oil, let it get hot, then add broccoli, onion and bell pepper: stir-fry 5 to 6 minutes or until vegetables are crisp tender. Return beef to the skillet / wok; add broth. Bring to a boil. Boil 1 minute, stirring gently, until sauce is slightly thickened.

I normally serve our stirfry over noodles, but it would be good over brown rice too! Enjoy!
