Fried Eggplant

Here's an easy side dish to use up all those eggplants growing in your garden! :)

::Peel and thinly slice one eggplant.
::Whisk 3 eggs together, add a little buttermilk and whisk again - didn't measure milk, probably 1/2 cup.
::Put sliced eggplant in the egg mixture salt and pepper both sides and then flour both sides.
::Dip back in egg mixture, sprinkle with parm. cheese, then flour again

Add enough oil to coat the bottom of your pan, make sure the oil is hot ---watch it too make sure it will not burn---add well coated egg plant slices and fry until golden brown on each side.
