Homemade Lemon Cookies



These lemon cookies are so easy to make and you cannot just stop at eating one either!

Ingredients:
::1 Package of Lemon Cake mix, I used the 15.25 oz., but per the recipe you can go up to 18.25 oz. package.

::2 eggs

::1/3 cup vegetable oil

::1 teaspoon Lemon Juice--I messed up a little bit on the measurements here---the lemon juice was in one of those  bottles to where you have to shake it out, I squeezed it out in stead and it went in the batter--oops! Ended up tasting great tho, so if you want to put a little more than a teaspoon in, it will be fine!

::1/3 cup confectioners' sugar...aka Powdered Sugar!

Directions:
::Preheat oven to 375 degrees F---pretty simple huh?
::Pour cake mix into a large bowl, stir in eggs, oil and lemon juice---mix well with spoon. Mix will be think.
::Roll dough into small round balls (seriously, make the balls small, thought I was--but I forgot that cake mix will rise! ahem!
::Roll balls around in powder sugar until they are lightly covered and place them on an ungreased cookie sheet.
::Bake for 9 -10 minutes (if using a dark cookie sheet, watch and don't let them burn, especially if it's the second round of baking.
