Quesadilla Cups!


Here's a fun little recipe--not to mention easy!

Here's what you will need:
Small muffin tin, bag of tortillas, small size the 6 or 8 inch in diameter, Pam, pepper jack bar cheese
*Keep in mind that 1 tortilla will make 4 quesadilla cups.

-Spay both sides of the tortillas with Pam or Olive oil, cut them into fourths by using a pizza cutter or knife.

-Put them in the {greased} muffing tins --like above

-Cut pepper jack cheese and put into the "cups"--pictured above.

Bake in a 375 F degree oven for about 10 minutes. Let them set for about 3 minutes before eating. Eat just like this or add some salsa to liven things up a bit.

For a healthier version of this recipe, you could use spinach quesadillas ( the green ones) and any fat free cheese.

  1. Okay I saw this in time to make for supper tonight. We made them with Homemade re-fried beans and cheese. I made one muffin tin pan enough for the three of us and some for lunch tomorrow or so I thought. I only got one. DH and DD ate 11 by their selves. I had homemade salsa, guacamole and shredded lettuce to accompany them no on touched the chips but me. This is definitely a keeper in our house!!!
