Banana Bread Recipe---This Freezes great!



When I normally make banana bread, I usually make a couple extra loaves to throw into the freezer and enjoy over the next couple of months. This time I only had two bananas, so I only made one loaf yesterday afternoon, and it was gone before we went to bed--Oh well, at least my husband and children enjoyed it!

Here is the Banana Bread recipe:
1/4 cup butter, soften
3/4 cup sugar
2 eggs
3/4 cup mashed rip bananas (about 2)
1/2 cup sour cream (I am convinced that this is what makes this bread so yummy!!!!)
2 and 1/4 cups all purpose flour
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts...optional!

*In large mixing bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
*Stir in bananas and sour cream. Combine the flour, cinnamon, baking soda, and salt. Stir in banana mixture just until moistened. Fold in nuts if using them.
* Transfer to a greased bread pan, reg. 8 x 4
*Bake at 350 degrees F for one hour or until that faithful tooth pick comes out clean. Cool for 10 minutes before removing from pan. Let cool completely before cutting with a knife.
