Weight Watcher's Monday


Well my husband and I joined Weight Watchers a little over a week ago. So I thought I would share with you each Monday my results and a new healthy recipe that we have tried...and loved!

The first day we joined I had no problems getting all my points in---I actually went into my extra points for that week, eek! Thankfully the rest of the week went much better.

At our first weigh in, my husband lost 8.8 pounds and I lost 7.6 pounds--I was ecstatic!

Here's the new recipe that we tried tonight.

Dijon-Roasted New Potatoes

sprays of cooking spray
2 Tbsp Dijon Mustard
1 tps Olive oil
3/4 tsp paprika
1/2 tsp table salt
1/4 dried thyme
1/4 tsp black pepper
1 1/2 pounds uncooked new potatoes, red or white, quartered

*Preheat oven to 425 degrees. Coat 9x13 inch baking dish with cooking spray.

* In a large bowl, whisk together mustard, oil, paprika, salt, thyme and pepper, add potatoes and stir to coat.

*Transfer potatoes to prepared baking dish and roast for 15 minutes, stir and raost for about 15 to 20 more minutes until done.

**This will yield about 1 1/4 cups per serving (which is 4 servings)
**each serving is 4 points, according to Weight Watchers.

My husband made a layered fruit salad with green grapes, cantalope, oranges, and kiwi---which was ZERO POINTS!!
