Just for Fun....

I have this book that is filled with a lot of ideas on EVERYTHING--one section is called "Cooking Hints." It is a very old book and I thought that since we are all cooking today and tomorrow that it would be neat to share some of these ideas with you, some I have tried and some I have not, some will make you laugh and some will make you say...DO WHAT!

1. NO LUMP GRAVY:
To make gravy easier, put flour and 3 to 4 ounces of water in a half- pint jar and shake quickly. Then pour into hot fat in skillet. It will not get lumpy.

2. DRAW OUT BURNS FROM BEANS:
If beans burn while cooking, place a dry slice of bread on top of beans and it will draw all the burnt taste out. Then exchange pans and keep cooking.

3. WHEN MAKING A CAKE:
Always cream the flavoring spice, or grated fruit peel with the shortening. The aromatic flavor is then mixed more thoroughly through the batter.

4. MARSHMALLOW ICING:
When baking cupcakes try placing a marshmallow on the top of each cup cake just before removing from oven. You will have a nice tasty frosting without bother.

5. TESTING EGGS:
When in doubt about their freshness, test eggs in a pan of cold water. An egg that floats is bad; one that stands on end is stale; one that lies at an angle should be used immediately or discarded; one that lies flat is fresh.

6. USE A THIMBLE WHILE GRATING:
Wear a thimble over your thumb when grating vegetables. This protects the thumb from nicks and also protects that manicure.

7. ADD EGG TO MASH POTATOES:
Mashed potatoes improve in texture and taste with the addition of a beaten egg white. They will also whip up lighter if the milk is hot when you add it to it.

8. SHREDDED COCONUT:
Freshen stale coconut up by placing it in milk for a few minutes before using it.

9. Thicken Soups
To thicken soups add 2 or 3 tablespoons of oatmeal to it. The oatmeal will add richness and flavor.

10. SUBSTITUTE FOR WHIPPED TOPPING:
You will have a delicious substitute for whipped cream by adding one banana to two egg whites and beating until stiff. (The banana will dissolve.) Add 2 tbs. sugar.
