Fried Eggplant - Yum!

YUM, is all I have to say! A friend gave my husband some home grown veggies and one was an eggplant, haven't ate one of those in years! Having problems getting your children to eat their veggies then fry them; I am sure that frying them throws ALL the nutritional value right out the door! But hey---nothing fancy, but here is how I fried them.

Peel and thinly sliced one eggplant.
Whisk 3 eggs together, add a little milk and whisk again - didn't measure milk, probably 1/4 cup.
Put sliced eggplant in the egg mixture salt and pepper both sides and then flour both sides.
Dip back in egg mixture, sprinkle with parm. cheese, then flour again.

Then eat! Or take a picture like my son did and then eat! Enjoy!
